Mark and Danielle, the owners of Noteology, love to be creative, in the woods! They own a Maple Farm in the Finger Lakes region of upstate New York and tap the trees to make some of the tastiest maple syrups and confections.
When the season shifts from winter to spring in the Finger Lakes, they fire up the arch and slowly boil the sap from their maple trees into delicious maple syrup. The farm dates back to the mid-1800’s and they proudly steward the land of century old trees while sustainably managing their certified bird-friendly forest.
They make maple syrup the old-fashioned way, and that’s the way they like it.

Maple Grade: VERY DARK | STRONG
At the very end of the maple season is when we get VERY DARK in color and STRONG in flavor syrup. This grade is intense and is perfect for cooking and baking because it has the most pronounced maple flavor. Great in breads, cookies and baked desserts as well as BBQ, baked beans or to make a maple vinaigrette.
Sugarmaker's Tip: This syrup is difficult to make because there is a very short window of time that you can make it. But when you do, it's the best when you want the distinct maple flavor. Our go-to for cooking and baking.
